When I try to zoom in and make sure the lines are snapping properly, my drawing disappears and only the line I'm
working with is visible.
Thoughts?

Hi peter, and welcome to the QCAD forum.
Please read the above forum rules in red.
Perhaps an attached example file would clear things up. (How to Attach a File to a Post)
Disappearing line-art on zooming may be related to 3D information.
Difficulties in snapping to may also be related to that.
Being able to snap but that other content disappear is rather the inverse.
Entities near the cursor are highlighted (what may also be darker) but that doesn't affect the other content.
Before anything else make a copy of your drawing file and try:
Menu Misc .. Modify .. Flatten Drawing to 2D. (QCAD Pro)
All Z-coordinates values are then set to zero.
Remind that there is no easy way back afterwards.

For the moment I can't replicate your problem.
It seems that you are drawing on a white background.
On the other hand you prefer a darker theme.
Typically we draw in Mode_Space and not in Paper_Space.
How that is presented on paper is a concern for later.
A dark to black background is more gentle for your eyes.
A screen emits bright white light, a page reflects ambient light.
The contrast of the Line-Art is better on a dark to black background.
An example file might clear things up.
BTW: You can attach screen captures directly instead of embedding them in a DOCX file.
What is the line weight? Perhaps don't use 0.00mm
